Slide At two specific points in the slaughter process, a camera takes a photo of each carcass, and this photo is stored for a future inspection, enabling the segregation of carcasses that have bruising, and with evidence in the image. In addition, the carcass classification and analysis is 100% done using artificial intelligence, avoiding fraud and human error, and identifying finishing and bruising. In 48 hours, the chamber is opened to measure the pH of the carcasses, in order to verify the correct color pattern and tenderness of the meat. The pH data are collected by the ecotrace platform and stored in the blockchain, and then the carcasses are taken to deboning, which on that day is exclusive to Chile. Slide The origin of the traceability process begins at the grandparent stock farm, going through the parent stock and broilers, until it reaches the meat packing industry. In this process, complete husbandry data is collected, such as poultry profiles, feeding histories, and medications that have been applied.
